Savvy Satuday- Dinners quick, cheap and easy!!

I would normally post about my shopping trip but I got thinking today as I was planning out my menu for next week that most of my dinners are really quick and easy!

I make alot of my meals in the crockpot, many may think I'm lazy, but with an active 9 old, and when I'm in school, time is all but on my side... so I learned quick!

If you don't have a crockpot, I'll put my suggestions below the instructions of how to do it in the oven!

Okay, ready for some delicious meals that are quick, cheap, & easy?

My first favorite is Mexican Chicken.  I can't take any credit for this idea since it came 100% from my mom.  It's sooo yummy.

Ingredients:
Chicken Breasts (how ever many you want to cook or up to 6 in a crock pot)
Taco seasoning   (always good prices on these at Walmart OR Safeway!)
1/4 c. cooking oil
3/4 c. water
1 cup salsa

Okay the directions are easy.  You can put these chicken breasts in the crock pot frozen and it doesn't affect the moist, pull apart deliciousness that made me convert to a crock pot.... 

1.  Pam or grease your crock pot (makes it easy to clean up!)
2.  Place frozen or thawed chicken in crock pot
3.  In a small bowl pour water, oil and package of taco seasoning and mix up
              *** one thing to keep in mind with the taco seasoning... if you have 2 chicken breasts cooking like we usually do, only put 1/2 the taco package in to mix up OR if you like it a bit more spicy pour it all in.  I've made up to 6 chickens with 1 package... maybe add 1/4 c more water if you do 6 servings to keep it moist.
4.  Pour seasoning mix over the top of your chicken in the crock pot
5. Pour the salsa on top of the chicken to bake


Cooking time:
If you place on HI it will be done in 3-4 hours
If you place on LOW I'd recommend 5-6 hours but keep an eye on it depending on the amount of chickens you are cooking! :D

**served with Spanish rice (i buy the package or box) and a fresh vegi!

(No crock pot?  Do the same procedure in the recipe, but put it in a pyrex pan.  Set oven on bake at 400.  Cook for 1 hour with a piece of foil covering the top of the pyrex pan)

The second crockpot quick, easy, and cheap recipe is pretty basic.  I search for the GRILL MATES packages in the seasoning section.  We love the Chipotle, Herb&Spice, Tomato, basil &garlic packages!

I do the exact same procedure as the Mexican Chicken with either pork chops, beef tips or chicken. 

Ingredients:
Chicken breasts (frozen or thawed)
GrillMates seasoning packet (Safeway has great deals on these, so does Foodland!)
1/4 c vegetable oil
3/4 c water

Directions
1.  Pam or grease the crock pot
2.  Place chicken in the crock pot
3.  Mix the seasoning with oil and water
4.  Optional:  Dice up vegetables (potatoes, carrots, onions) and add to crock pot
5. Pour seasoning over chicken (and vegetables if you use that option)
6.  Cook on HI for 3-4 hours or LOW for 5-6 hourse

No Crock pot:  Do the same procedure just pam/grease a pyrex pan.  Set oven on Bake at 400 for 1 hour.  Cover pyrex pan with foil to keep in the moisture!

Is it any kind of chicken? like does it have to boneless and skinless or can it have the skin and bones still?
