We're a family of 2, so multiply your ingredients to the amount you need.
2 chicken breasts
1 tblspoon veg oil
1 1/2 tbl spoons butter
1 garlic clove, minced
1 tbl spoon flour
1/2 cup chicken broth
1/2 c lemon juice (add more for lemony taste or less if you prefer)
optional ingredients: 1 tblspoon capers (add with minced garlic), and 1 tblspn fresh parsley
1. Slice the thawed chicken into strips
2. Put veg oil in a pan/skillet over medium-high heat
3. Cook chicken in oil until golden brown, place on a plate and discard unused oil
4. Add butter, and garlic to empty skillet and heat for 30 seconds. Add flour with butter/garlic for 30 seconds. Stir in broth and lemon juice. Stir mixture for 2 minutes or so.
5. Stir in browned chicken with juices for 2-3 minutes then add salt/pepper if preferred.
Serve with Rice or Pasta....
