Stir Fry- thanks to my experimental husband, it's never the same which is why we have it so frequently!
Sliced tomatoes and avacado (going bad, had to be eaten!)

I made borscht last week - a great way to get a lot of veggies in one meal! Used a recipe I found online and everyone loved it. But if you do make it buy the beets at the Farmer's Market if they're not on sale at the grocery store. At Foodland they were pricey last week.
